Directions:
Grease a glass baking dish with coconut oil and set aside
In a small sauce pan, boil 1 1/4 cups water
Then, in a high powered blender, add the gelatin and 1/2 cold water

Blend until liquefied
Pour into your greased baking dish
Place into your fridge until set

STRAWBERRY COCONUT OVERNIGHT OATS
INGREDIENTS:
4 cups rolled oats, gluten free
12 oz frozen or fresh organic strawberries, pureed
6 cups almond milk
1/2 cup shredded unsweetened coconut
1/3 cup chia seeds
1/4 cup maple syrup
1 tsp vanilla extract
DIRECTIONS:
In large mixing bowl mix all the ingredients. You may need a little bit more milk if you like. I like mine a bit more liquid like than pudding consistency so I add more. Place in the refrigerator overnight and eat the next morning.
This recipe will keep in your refrigerator covered in a glass container for up to 5 days.
BANANA CHIA SEED PUDDING
Yield: 4 servings Total Time: 5 minutes mx
INGREDIENTS:
1 cup coconut cream, you can use coconut milk
3 bananas
10 dates
1 cup chia seeds
1 1/2 cup almond milk
banana slices, optional
chopped almonds, optional
DIRECTIONS:
In a food processor blend all the ingredients. Divide mixture between four serving glasses or bowls. You can eat it immediately or refrigerate for future consumption. As the pudding sits it will become thicker. This will keep refrigerated for up to 4-5 days. Tip: Serve it with sliced bananas and chopped almonds.
